I love it when my family goes nuts for the simplest recipes.  It sure makes my life easier when I can just add a few ingredients to the slow cooker and end up with a delicious meal that’s guaranteed to get consumed. This Slow Cooker Chicken Teriyaki is so easy to make and takes only a few minutes to assemble in the slow cooker.  A simple side of veggies and some steamed rice and you have a complete meal with so little work.  Recipes like this teriyaki chicken recipe make it easy to eat at home any night, even the busy ones!

How to make teriyaki chicken simple:

  • toss everything in the slow cooker in the morning while making breakfast
  • if you have one, set your rice cooker to be done at dinner time with jasmine rice
  • have bags of frozen veggies on hand that can be steamed for a quick side

Ingredients for this easy chicken teriyaki sauce:

  • honey
  • soy sauce
  • rice vinegar
  • brown sugar
  • powdered ginger
  • minced garlic

The great thing is you can keep all of these ingredients on hand and have them to use in so many slow cooker recipes, like slow cooker honey chicken!

Slow Cooker Teriyaki Chicken

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons jarred minced garlic
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch

Instructions

  1. Add chicken to slow cooker

  2. Whisk together all remaining ingredients except for cornstarch

  3. Whisk cornstarch with 2 tablespoons of water until smooth, then whisk into sauce

  4. Pour sauce over chicken in slow cooker

  5. Cover and cook on low for 6-8 hours or high for 3-4

  6. Remove and shred chicken and return to sauce

Recipe Notes

Recipe tips:

  • if sauce is not thick enough you can also pour into a saucepan and simmer for a few minutes until thickened
  • you can also cut chicken into small bite sized pieces before cooking if preferred
  • if you choose to add some veggies to this recipe, stick with carrots or other hearty root veggies that won’t get too soft while cooking
