Lamington cakes are a butter or sponge cake in the shape of cubes, that are covered with coconut and icing. Following is a quick recipe for making these gorgeous cakes in your own home.
125 grams of room temperature, unsalted butter
125 grams of caster sugar
Two slightly beaten eggs
250 grams of self raising flour
A pinch of salt
Four tablespoons of milk
One teaspoon of vanilla extract
For the icing:
400 grams of icing sugar
100 grams of cocoa powder
175 milliliters of boiling water
200 grams of desiccated coconut
Firstly, you need to beat the sugar and butter together in a mixing bowl until the mixture is creamy and pale. Next, beat the eggs into the mixture, a small amount at a time, until well mixed in. Add the flour and salt and fold into the creamy mixture with the vanilla and the milk. On another note, you can just beat all the cake ingredients together using a food processor until the mixture is nice and smooth.
Move the mixture to a well oiled and base lined cake tin. Smooth the surface of the mixture level with a palette knife and bake in a preheated oven at 375 degrees Fahrenheit for around half an hour until it has risen and is firm to the touch. Then leave the whole mixture to cool for around 5 minutes and loosen the edges, then turn it out onto a wire rack and rake off the lining paper. This should then be left out overnight.
To make the icing, put the cocoa powder and icing sugar into a mixing bowl, make a well in the middle and add the boiling water to create a smooth chocolate icing that will pour consistently.
Cut the cake into 24 sections. Use two forks to dip each slice into the icing and then immediately coat the slice with coconut. Then leave it to set on some baking paper.
This delicious cake will serve up to 24 people, the preparation time is 20 minutes plus overnight standing, and the cooking time is around 30 minutes.
