Turkey Quiche Muffins with Broccoli: These are some of my favorite egg muffins to make for meal prep packed withs savory deli turkey, cheddar cheese, broccoli, and eggs. They are portable, packed with protein, and super tasty.
Baked Chicken Fajitas: Fajitas are something I cook all the time, but sometimes I don’t want to stand by the stove to saute everything. This version is made in the oven and you won’t believe how much flavor they have.
Sausage, Spinach, and Polenta Bowls: Creamy polenta is a comfort food I couldn’t live without. This version is surprisingly light with chicken sausge, spinach, and cherry tomatoes.
Slow Cooker Lasagna Soup: Lasagna is a meal we always ate one cold nights but there isn’t always time to assemble one. This slow cooker version couldn’t be easier to make and has all classic flavors of a lasagna.
